I think you should do overnight booking. Other OKT charging about $300 around there for overnight, 8 hours, 3 shots.

You should do it too.

What do you guys think?

Unfortunately you cannot book a train ticket. You can only buy it on the station or in a travel office.
But to see at what hour you can catch a train, visit pkp.pl and type Kraków to OLSZTYN. But remember: in both cities you have more than one train station!
I don't think that taking a bus in Poland (pks) is a good idea. Usually they are expensive, uncomfortable and always late. And it's really long way from one to another...
There is a lot of trains from Kraków, like every 2 hours, but some of them are cheaper and the journey lasts more, and some of them are expensive (eurocity [ECC], intercity trains [ICC]), but the journey is shorter. I think, that there's no possibility to get to Olsztyn from Krakow without any change.
